Trained at Paul Bocuse Institute in Lyon, Chef Mathieu brings over 20 years of classical French cooking to Bangkok. His philosophy: respect the ingredient, master the technique, surprise the palate.
Before Le Palais, he helmed kitchens in Paris, Geneva and Singapore — earning two Michelin stars along the way.
